I'd like to varnish the ribs before I store them during spar construction, but wondering if I'll need to apply glue when building the wings. Can I varnish them now, or should I wait until they're on the spars?

They are glued to the Spars at some point after being slid on.
Personally, I would store them in a dry space and varnish after the wings are completed.
If I remember correctly, I've seen at least one that wasn't varnished at all, due saving weight.
Best talk to Teamminimax and get their opinion.

Varnish them now. It will be much easier. The areas to receive glue later are small and easily sanded.  I would make a bath and dip a rib all at once so complete coverage is guaranteed.
