I have a 1030 with a 503. It has the standard windshield which does nothing for a tall pilot. Has anyone built an enclosed canopy for the 1030? I really enjoy my head outside. But it would be much easier to be able to wear a headset in an enclosed space.

I think your best option would be buying the 1600R plans.  You should be able to use the turtle back and fully enclosed cockpit added onto your fuselage.  The windscreen is all single bend Lexan.  So you wouldn't have to "blow" a compound curvature canopy.
